Last month, my husband brought home a box of organic sweet potato from Jecheon. They were planted by my mother-in-law and harvested by my husband. And last week, I ordered a Mulex Smart Fryer from T-mon. I thought I’d give it as a present to my son’s teacher, but I was curious how it works! And then I craved for “camote cue” or Filipino-style sweet potato fries. So I opened the box and tried the air fryer.
Here’s what I did. First, I peeled and sliced the sweet potato. In a bag, I put two tablespoons of brown sugar and added the sweet potatoes. Shake the bag until the sweet potatoes are fully coated. Then I added half a teaspoon of cooking oil (I used grapeseed) and mixed.
I transferred the sweet potatoes in the basket of the air fryer. Set the timer to 15 minutes and the temperature to 200.
After 10 minutes, I took out the basket and shook it making sure the sweet potato were not sticking. When the timer stopped, I was excited to see perfectly cooked “camote cue”. The sweet potato fries or “camote cue” cooked with an air fryer is not greasy at all and not as dry as when I cooked them in the oven.
My son said he’d eat them first and left me with only four pieces! I am so excited with the result that I’m excited to try other dishes ~
